Beautiful Buns!


Well, they are beautiful! I baked bread two evenings ago using my Mama’s pizza dough recipe. I try not to bake bread too often..I mean, I can easily eat a couple of these with some cheese and butter and honey. It’s so hard to resist bread when it’s hot out of the oven and the apartment smells heavenly 🙂

I use instant yeast so there really is no need to proof it. Put the 2 cups of flour, 1 tbsp of yeast, 3/4 tsp of salt and 1 tsp sugar in a mixing bowl. You can use your hands but I used my mixer. Mix to combine.
Add the oil and yogurt. Using the hook attachment, mix until combined.
Now add the lukewarm water very slowly until you have dough that looks like the above. You can see how soft it is. If you put too much water, it will be moist. Press your finger in it and it should spring back.  Cover it with a plastic wrap or towels and leave it alone for an hour. Put your feet up and watch some episodes. I like ‘The Exes’ 🙂 10 to 15 minutes before your dough is done rising, preheat your oven to 375 degrees F.
Here it is after one hour. 
Roll into balls. I count 8 here. 
Brush with a mixture of 1 egg yolk and 1 tsp of yogurt. I added sesame seeds on top. 
Bake for 20-25 minutes until golden brown.

Some burrata with black truffle–Wow, this stuff is good! You can get it at Whole Foods. Peppers, tomatoes, butter, cheese, and some olive oil with herbs and spices. And of course, always some honey. I am addicted to Black Forest honey–it has a rich not too sweet taste.
Great bread with burrata and Farmers Market basil and tomatoes. Mmmmmmmm.

My Mama’s Pizza Dough Recipe


2 cups flour
1 tbsp yeast (I use SAF Instant Yeast, which I purchase at Amazon)
3/4 tsp salt
1 tsp sugar
1/4 cup plain yogurt (I use Dannon whole milk yogurt. You can use lowfat. I have never tried it with Greek yogurt but you are welcome to try)
1/4 cup canola oil
As much lukewarm water as it takes until the dough is soft, moist and springs back when you touch it
Preheat oven for 30 to 45 minutes at 450 or 500 degrees F with the baking steel/pan in the oven. It is not necessary to proof the yeast but you can go ahead and do that. I’m lazy and just throw it all in:) Place flour, yeast, salt and sugar in a mixing bowl and, using a hook attachment, mix on low until combined. Add yogurt and canola oil and mix. It is important to slowly add the lukewarm water until you get a dough that is soft and moist. Poke a finger in there and if it springs back, you are good to go. Let it rise for an hour and use right away. Shape into balls and place on baking tray with parchment paper. Brush with 1 egg yolk and 1 tsp yogurt mixture. Bake at 375 degrees F for 20-25 minutes until golden brown.
