Mojito Ice Pops

You know how you are trying to figure something out and it is so obvious (that a monkey would have known and stuck its tongue out at you) but your brain refuses to cooperate and wants some time out? And you think if you lay down and close your eyes for a bit–in my case take a nap–at 9:30 pm, that it will come to you? Well, it did come to me, an hour and a half later, after a nap. Now that doesn’t sound like a good sign but I’ll blame it on the moon and the shifting of the planets and leave it at that. I was about to throw the empty Nutella container out when my husband suggested I put some milk in it, shake it up and have some chocolate milk! Husbands do come in handy. It would have taken me another freaking nap just to figure that one out. Enough about chocolate milk. If you love Mojitos, let’s make some Boozy Popsicles 🙂

Grab that bottle of white rum. A lime, 1/2 cup of mint, 1 cup of sugar, 2 cups of water, 1/4 cup of lime juice, 1 tbsp of lime zest, and the Popsicle maker thingy.

Water, sugar and mint go in a saucepan. Let it come to a boil then lower and cool until the sugar is dissolved. Keep stirring. Remove from heat and give it a 10 minute steep. If you don’t want it too sweet, add less sugar and increase the rum 😉 hehehe.

Strain it and add the lime zest, lime juice and if you’re smart, the rum. Here’s what I did. I forgot to add the rum and then I poured it into the Popsicle thingies. I suddenly and thankfully remembered the rum, grabbed the bottle, started adding some in each, gave it a good stir and stuck it in the fridge for a few hours.
